I mentioned before that I have lots going on, even in retirement; today is no exception. Projects today were to weed and replant one of my front sidewalk flowerpots, cut up and dispose of some empty boxes in the garage (which is, even right now at after 8 p.m., 95+ degrees), take some pictures for listings, the ever-present laundry and dishes, and of course dinner preparation. Tonight’s dinner is a modified pasta dish I found online. After taking his first bite of it, Hubbin declared it “Make It Again SOON, ‘Good’.”
I cooked and drained rigatoni and stuffed it with cut up mozzarella sticks, placed the stuffed pasta in a 9×9 square pan, and covered it with a thin layer of pasta sauce. I did two layers, then I sprinkled the dish with garlic powder, Italian seasoning and minced onion, then topped it with a combination of parmesan, asiago, provolone, mozzarella, and Romano cheeses. I baked it uncovered for 35 minutes uncovered at 350 degrees.
Totally yummy!
Tonight I’m reflecting on the surprise call we got from our youngest Gambaby this morning. He started the conversation with “Gam-Ma!” when I answered the phone, then went from there. He’s trying to carry on a conversation but struggles with a lot of the words, but I’m learning and he makes me smile. He calls Hubbin “B-Pa” which cracks us up. Hubbin will say, “Say Grandma,” he’ll say, “Gam-Ma!” then Hubbin will say, “Say Grampa” and he’ll say, “B-Pa!” I don’t want him to ever change the way he says that.
Not much else going on. A potential severe storm had been on the horizon for us but blew around us, which is fine; Tuttle, Oklahoma bore the brunt of the winds that came through – took out a mobile home, demolished a playground, and relocated a few roofs.
