Jalapeno Paste, My Happy Little Accident

I made a happy accident the other day. I tried to pressure-can sliced jalapenos in a spicy brine, but they turned out really mushy, which I discovered upon opening the jar. I didn’t want to throw it away, so I drained the extra brine from the mushy jalapenos through a sieve (I’d recommend saving the brine for another batch), and then I put what was left into my Ninja Nutri-blender with about a tablespoon of avocado oil. It made a pesto-looking mash.

Hubbin loves it! He spreads it on his eggs, puts it on his sandwich wraps, and most recently, has added it to his hamburgers. He declared it, “Make it again, soon” good, so I’ll continue to grow jalapenos and hopefully be able to recreate this “mistake”.
